Marble Banana Muffins

Makes 6-8. Total time ~45min.

INGREDIENTS

  • 2 large overripe bananas

  • 2 eggs (if vegan, replace with 2 "flax eggs" )

  • 3 tbsp extra virgin olive oil

  • 1/2 tsp of vanilla essence + a sprinkle of cinnamon

  • 3 tbsp coconut sugar or raw sugar

  • Gluten free self raising flour (about 1 cup)

  • 1.5 tsp baking powder + 1 pinch of salt

  • 1/3 cup raw cacao powder mixed with a splash of hot water

METHOD

  1. Blend the bananas, eggs, oil, vanilla and sugar until smooth.

  2. Incorporate the flour, salt and baking powder. Whisk until no clumps remain. Batter consistency should be quite runny.

  3. In a 2nd bowl, mix the cacao powder with half of the batter; adding water to obtain the same original runny consistency.

  4. Fill 6-8 muffin cups with both the chocolate and vanilla batters, alternating in layers. Swirl lightly with a knife.

  5. Bake for 20-25min at 180°c, until set and golden.

  6. Cool for 10min before eating.

WHY USE THESE INGREDIENTS?

  • This recipe uses bananas as main sweetener, reducing the total amount of sugar used. Bananas are also rich in potassium and fibre.

  • Using extra virgin olive oil instead of butter reduces the amount of saturated fats.

  • Raw cacao is high in potassium, magnesium, iron and antioxidants.
