Banoffee date bites

Makes 12-15. Total time : 1h

INGREDIENTS

  • 1 punnet of medjool dates (12-15)

  • 6 tbsp (3 heaped) peanut butter (we like Mayver's dark roast)

  • 1 banana (quite ripe)

  • 200g dark chocolate (70%)

  • 1 sprinkle of salt


METHOD

  1. Pit the dates & dispose on a plate

  2. In a bowl, whisk peanut butter and mashed banana, and,

  3. Using a teaspoon, stuff the dates with the mixture.

  4. Freeze the stuffed dates for 20min. Meanwhile, melt the chocolate "au bain-marie".

  5. Once the stuffing has hardened, cover the dates with the melted chocolate. Sprinkle with salt and freeze until solid before eating!

WHY USE THESE INGREDIENTS ?

  • Dark chocolate ( >70%, the darker the better) is also a source of magnesium, potassium and antioxidants.

  • Peanut butter ( 100% peanuts) is a good source of healthy fats and protein.
